Roasted Tomato & Burrata Pasta
Summer is calling and she says you NEED this pasta in your life! It calls for the freshest, simplest, and delicious ingredients.
Do you grow tomatoes during the summer? If so, keep some aside for this recipe. Making tomato sauce is so simple, yet many of us (including myself) buy it in a jar, which is totally fine and convenient. However, quite a few canned tomato sauces contain added sugars, up to 12 grams per 1/2 cup. If you are trying to limit the amount of added sugars in your diet, I suggest making your own (recipe for that will be below) or try Rao's, Prego No Added Sugar, or Classico.
I love adding extra greens wherever I can. In this recipe, I decided to trial it with sunflower sprouts. The addition of these sprouts added a beautiful nutty flavor. Sunflower sprouts are a great source of poly and monounsaturated fatty acids, fiber, and protein.
Make this at your next gathering! It is simple, involves the use of one pot and one pan which means less clean up for you!

Time: 45 minutes
Ingredients
1 box of angel hair pasta
1/4 cup olive oil
2 cups of baby tomatoes
4 cloves of garlic, minced
2 tsp salt
1/2 tsp black pepper
1 tsp of sugar
1 tbsp Italian seasoning
1 cup sunflower sprouts
2 burratas
Optional: sprinkle of parmesan cheese
Directions
Place a large pan over medium-high heat (with no oil)
Once hot, add whole baby tomatoes, let those sit for 5-8 minutes, flipping them occasionally (aiming for seared brown outside.)
While tomatoes cook, fill a pot of water and add 1 tsp of salt (always salt the pasta water friends). Place pot over a medium-high heat, cover the pot.
Once the tomatoes have been in the pan for 5-8 minutes, add olive oil and stir.
Take a flat spatula and press down until they burst. Be careful, this may get messy!
Once the tomatoes burst and start to form a sauce, add minced garlic, sugar and spices. Stir. Grab a spoon and do a taste check, make sure you like the saltiness, sweetness, and other flavor profiles. Adjust as you like.
Once the pot of water starts to boil, add pasta. Cook according to boxed directions.
Once pasta is cooked, add to pan with tomato sauce. Incorporate the pasta and sauce.
Take the pan off the heat, add sprouts and burrata on top. Enjoy 😋
