Fattoush Salad with Homemade Dressing

The fattoush salad is a Lebanese dish containing simple yet delicious ingredients.

When it comes to salads, I am easy to please. I love a good crunch, saltiness and multiple flavor profiles.

My dad is from the Middle East and growing up we always made a very similar salad. A salad that consisted of crispy romaine lettuce, juicy tomatoes, spicy radish and onions, cucumber and parsley. It is still one of my favorites and a salad that I make every week.

The Fattoush salad is a little bit different. Instead of parsley it uses mint! Which sounds odd, I know. But trust me when I say that it gives the salad a delicious fresh flavor. Thus making it the PERFECT spring/summer salad.

With any salads, I love to add more crunch and carbs by throwing some pita chips or a whole grain crackers on top. It makes the perfect scooping device and gives the salad more density and whole grains therefore making us full for longer, who doesn't want that? I ALWAYS throw some sort of protein on top as well. Either garbanzo beans, grilled chicken, tuna fish, tofu, shrimp etc., because it helps decrease our hunger hormone ghrelin.

Time: 20 minutes

Ingredients

For the salad

  • 3 heads of romaine

  • 1 large cucumber

  • 2 roma tomatoes

  • 1/4 red onion

  • 4 radishes

  • 1/4 cup mint

  • Optional toppings: feta, kalamata olives, and pita chips/crackers

For the dressing

  • 1/4 cup olive oil

  • 1 lemon squeezed

  • 1 tsp Z'atar seasoning

  • 1/4 tsp salt

  • 1/4 tsp pepper

Directions

Wash and chop romain. Place romain into a large bowl with a lid. Next dice cucumbers and tomatoes, through those into a large bowl. Thinly slice red onion and place in large bowl with the rest of the salad. Dice radishes and finely chop mint. Place in large bowl.

For the dressing and all ingredients into a sealed jar. Shake until ingredients are combined.

Pour dressing over salad and place lid on top of salad bowl. Vigorously shake until dressing and salad are combined. Optional: throw in feta, olives, and pita chips!
