Crunchy Southwest Salad

Stop with the plain Jane salads please!!! Spice up your salads with all the toppings like cucumbers, radish, tomato, corn, bell peppers, beans or animal protein, grains, etc. Beefing up your salads with extra toppings will make you feel full and satisfied for longer!

Try this delicious and satisfying crunchy southwest salad. It's seriously AMAZING, I even got my husband to eat it 😋

 

This salad is PACKED with nutrients such as fiber, antioxidants, and a variety of vitamins/minerals. I added some beans and cheese to add some protein in order to make this salad more filling. Protein will help bring down your hunger hormone, ghrelin, which is why I'm a big advocate for adding a source of protein in all meals and snacks. I also added in some corn tortilla chips for some extra fiber and crunch to improve satisfaction. I highly recommended adding something crunchy to a salad as it can help boost yumminess and satisfaction 😊

 

There is a bonus recipe below which is a homemade chipotle dressing! Its super easy and tastes amazing with this salad.

Time: 25 minutes

Servings: 4 people

 

Ingredients

For the salad:

  • 5 oz of mixed greens

  • 1/3 cup shredded carrots

  • 1 scallion, diced

  • 1/3 cup of diced tomato

  • 1/4 cup corn

  • 1/4 cup red bell pepper, diced

  • 1/2 cup cucumber, diced

  • 1/2 cup black beans, drained

  • 1/4 cup cilantro, roughly chopped

  • 2-3 tbsp of cotija cheese

  • handful of tortilla chips, crumbled (I broke them up with my hands)

  • Optional: diced avocado

 

For the dressing:

  • handful of fresh cilantro

  • 5.3 oz full fat, plain Greek yogurt

  • juice from 1 lime

  • lime zest

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/2 tsp garlic powder

  • 1/2 tsp ancho chili powder

  • 1/4 tsp cayenne pepper

  • 1/4 tsp of paprika

  • 1/2 tsp of cumin

  • 1/4 cup water

Directions

  • In a large bowl, place salad greens.

  • Next add in all of the ingredients.

  • For the dressing, grab a blender.

  • Add all of the dressing ingredients into the blender and blend until smooth.

  • Pour as much dressing as you like over the salad.

**You may end up with extra dressing which you can store in a small sealed container (i.e., mason jar). Extra dressing makes for a good chip and veggie dip 😋
