Banana & Cranberry Breakfast Cookies

You heard that right, cookies for breakfast!!! This isn't your ordinary cookie though. These cookies are PACKED with nutrients that will give you some energy to get the day started. Also this recipe is dairy free and vegan!

It's basically baked oatmeal in cookie form. It has oat flour and chia seeds which gives these cookies fiber, protein, and omega 3 fatty acids. I did sneak in some dark chocolate and dried cranberries for added sweetness 😋

This is the PERFECT recipe for those of you who don't have time to make a full breakfast, or for those who typically skip breakfast. You can make a big batch of these in the beginning of the week and grab and go as you please.

Servings: 12 cookies

Time: 30 minutes

Ingredients

  • 3 ripened bananas

  • 4 oz applesauce

  • 1/4 cup maple syrup

  • 1/2 tsp vanilla extract

  • 1 cup oat flour (or just blend 1 cup of oats)

  • 1/4 cup of rolled oats (not blended)

  • 1/2 cup all purpose flour

  • 1/2 tsp baking soda

  • 1/2 tsp cinnamon

  • 1/4 cup dried cranberries

  • 1/4 cup dark chocolate chips

  • 4 tbsp chia seeds

Directions

  1. Preheat the oven to 350 degrees F

  2. Line a baking sheet with parchment paper

  3. In a large bowl add banana and mash with fork until smooth

  4. Next add applesauce, maple syrup, and vanilla extract

  5. Mix until incorporated

  6. Next add oat flour, rolled oats, all purpose flour, baking soda, and cinnamon; mix well

  7. Lastly, add dried cranberries, chocolate chips, and chia seeds; mix well

  8. Batter should resemble cookie dough batter

  9. Using a spoon, spoon out 2 spoonfuls of batter for each cookie

  10. Repeat until batter is gone

  11. Bake for 20-25 minutes
