Glazed Lemon Poppy Seed Loaf

Looking for a sweet and refreshing dessert? Try this lemon poppy seed loaf. It is delicious! I love lemony desserts like these, they are perfect for summer.

I don't know about you but when it starts getting hot, I look for fruit based desserts, like fruits tarts, lemon desserts, or sorbet. I think heavier desserts like chocolate cake make me feel tired when it is hot out. Anyone else feel that way too?

I am not a baker but this recipe is super easy and hard to mess up. If you are also not the best baker, I highly suggest giving this recipe a try! I only used one bowl and there was no sifting necessary. I seriously lack patience for baking which is why my baking skills are lacking. But practice makes perfect, right?

This recipe is so MOIST! Yes, I said moist. I know that word is cringy but I don't know how else to explain it. Using a full fat milk (I used a full-fat oat milk) is a must! The fat is what makes it mooooiiiisssttt. Also do not over beat the eggs. Overbeating eggs contributes to the toughening of baked goods.

Ingredients

  • 1/2 cup softened butter

  • 1/2 cup granulated sugar

  • 1/2 cup full fat milk

  • 2 eggs

  • 1 tsp vanilla extract

  • 1/2 tsp lemon extract

  • zest from 1/2 of a lemon

  • 1 1/2 cups of flour

  • 1/4 tsp salt

  • 1 1/2 tsp baking soda

  • 1 1/2 tsp of poppy seeds

For the glaze

  • 1 cup of powdered sugar

  • 1/4 tsp of lemon extract

  • zest from 1/2 of a lemon

  • 2 tbsp of milk

Directions

Preheat the oven to 375 degrees F. In a stand mixer with a paddle attachment (or a bowl with a whisk or handheld mixer), add in butter and sugar. Cream the butter and sugar together until fluffy. Next add milk and eggs, mix (be careful not to over mix). Once mixed add in vanilla, lemon extract, and lemon zest. Now add the dry ingredients and mix in. Once incorporated place the batter into a greased or parchment lined loaf pan. Bake at 375 degrees F for 35 minutes. Once the loaf is fully baked let it cool for 20 to 30 minutes. While the loaf is cooling, make the glaze. In a medium sized bowl, add powdered sugar, lemon extract, lemon zest, and milk. Whisk until it becomes creamy and thick. Once the loaf completely cooled, pour the glaze over the loaf and smooth over. EnjoyπŸ˜‹
