Spiced Summer Squash Bread

There aren't many yellow squash recipes out there. I've seen stuffed squash, ratatouille, vegetable lasagne, roasted squash, and squash in a casserole. If I missed one, leave it in the comments below 😂. I feel like people don't know what to do with squash (honestly neither do I.)
I had way too many yellow squash in the fridge that were going to go bad. I had no idea what to do with them, and the recipes I mentioned above did not sound appetizing to me at the time. I've heard of people making zucchini bread but never yellow squash bread. I thought,"this can't come out terrible if I use yellow squash instead of zucchini." Guess what? It was the most delicious loaf I've made. To be honest, I like this way more than banana bread, yes...I said it.
I really like zucchini and yellow squash bread because it adds more fiber into the bread especially if you grate the vegetable with the SKIN ON. Yellow squash in particular is rich in magnesium, folate, and riboflavin.

Servings: 8-10 (depending on how thick or thin the loaf is cut)
Time: 60 mins
Ingredients
2 medium yellow squash
3 eggs
1/4 cup milk
1 cup sugar
1/2 stick melted butter
1 tsp vanilla
1 tsp baking soda
2 cups flour
Pinch of salt
1 tsp cinnamon
1/2 tsp nutmeg
Optional: decorating sugar to top
Directions
preheat oven to 350F
line a loaf dish with parchment
grate squash and place in a dish towel
squeeze out as much fluid as possible
place squash , eggs, milk, sugar, melted butter and vanilla into a large bowl
mix until incorporated
next add flour, baking soda, and spices
mix dry ingredients into wet
batter should be a pancake batter consistency
place batter in loaf dish
sprinkle decorating sugar on top
bake for 45-50mins
